Mines are built by villages to allow them to obtain minerals easier. They can be built once the culture of a village has discovered the "Mine" knowledge which can be unlocked at culture level 8. Only one mine is built per village.
Mines are worked by miners who will go inside mines to work and cause minerals appear near the mine; the minerals are then mined by other units with the "miner deposit" job. A village assigns a maximum of 5 miners at a time. Every time a miner enters a mine, it spends 2-3 months inside the mine, with a 60% probability to generate several minerals around the mine each time. After exiting the mine, the miner heads to the nearest "storage building", (i.e. tent or house), even though they are do not carry any resources.
The minerals that appear from a mine is determined by the biome of the mine's main tile (i.e. the lowest tile vertically, the center tile horizontally). A common issue with this mechanism is that roads are built to mines, removing the underlying biome, causing the mine to produce minerals as if it were not on any biome. The developers are aware of this issue (link), although it is unclear whether this will be fixed in the future.
Gold ore can only be naturally obtained from mines. Gem ore will also appear from mines even in biomes where gem ore doesn't naturally spawn.
